The last bit of preparation is an “optional” paste of butter and flour to thicken the sauce. I’m not sure if I’ll need it, but it’s best to have some standing by just in case. I’m not very good at this stirring lark, so I don’t want to have to do it in a panic later if it’s all too runny.
